TSB Finds Out More About Food Network’s `Best Sandwich in Texas’ at Patina Green

By Christine Baker and Nikki Darling, TSB Staff

Have you ever wondered what the best sandwich in Texas tastes like?

Downtown McKinney’s Patina Green is home to Food Network’s top-rated sandwich in Texas. On Aug. 7, Food Network Magazine released an article entitled “50 States, 50 Sandwiches,” in which they picked the best sandwich from each state and featured it in the magazine. Robert Lyford of Patina Green created the delectable ham and cheese sandwich that stole the taste buds of the professionals at Food Network to earn McKinney the No. 1 spot in Texas. With local made cheese from Hamm’s in downtown McKinney and fresh ham from Local Yocal, the sandwich is not only filling and delicious, but fresh and organic as well.

“I had no idea it was happening,” said Lyford, the chef at Patina Green. “It was Town Square Buzz that posted a photo of the article, and that’s how I found out.”

While August can generally be a slow month for businesses, Patina Green has found that numbers have increased and the ham and cheese sandwich is in high demand because of the publicity gained from the magazine exposure.

While the ham and cheese sandwich has stayed on the menu for quite sometime because of its popularity, the rest of the menu changes on a day-to-day basis, based upon what fresh ingredients the store can get from its local vendors that day.

“I like to know where my ingredients are coming from and I like to establish personal relationships with my vendors,” said Chef Lyford. “I change the menu on a daily basis because the menu depends on what kind of ingredients I can get fresh that day.”

Patina Green not only sells the best sandwich in Texas, but also sells fresh and organic ingredients on top of decorating ideas.

“The store is run by myself, my wife, and my mother in law,” said Chef Lyford. “We all have our special talents that we put together to create Patina Green.”

Christine and myself talked with Chef Lyford for quite some time all the while he prepared a ham and cheese sandwich for us to taste. Christine and myself can both attest to the fact that it is the best sandwich in Texas (that we’ve tasted, obviously). The fresh ham and cheese give it a delectable taste with a little spice to give it a kick. With a cookie and a sweet tea to top it all off the trip was more than worth it.
