Crazy for Cupcakes: Lorie Shows Us a Popular, Delicious Snack

Cupcakes have gained epic popularity over the last 7-8 years. What is it about these petite treats that have us so enthralled? Cupcakes used to be reserved for children’s birthday parties and offered in two flavors —vanilla or chocolate. In recent years, cupcakes have been raised to gourmet status; throngs of people flock to expensive bakeries everyday testing all of the designer flavor combinations and paying upwards of $4 apiece for the pleasure. 

The cupcake craze is fueled by stylish bakeries, elevating these cute confections to that of the latest fashion trend, not to mention the Food Network‘s hit show, Cupcake Wars. Personally, I like the fact that cupcakes have built-in portion control, provided you can stop at just one! Another key selling point is that you can sit or stand just about anywhere to enjoy one of these yummy treats, plates and forks are optional.

After nearly a decade in the limelight, cupcakes have proven they are here to stay! As a fellow connoisseur of these small bundles of joy, I am offering you two of my favorite flavors so bake a batch today and enjoy each blissful bite.

Chocolate Peanut Butter Cupcakes
Batter
1 package dark chocolate fudge cake mix
1 1/3 cups water
½ cup vegetable oil
3 eggs
½ cup sour cream
1 teaspoon vanilla
24 mini peanut butter cups unwrapped tossed in a tablespoon of flour

Preheat oven to 350 degrees. Mix all ingredients except peanut butter cups in a bowl with an electric mixer. Beat on medium speed for 2 minutes. Pour batter into cucpake pan lined with paper wrappers filling them 2/3 full. Press a peanut butter cup into the center of each cake and bake for 19-23 minutes. Let cupcakes cool completely.

Frosting
1 stick butter softened
1 cup peanut butter
½ cup heavy cream
2 teaspoons vanilla
6 cups powdered sugar

Combine butter, peanut butter, vanilla, cocoa and about half of the cream into a bowl and beat with an electric mixer until it is smooth. Add sugar slowly, adding more cream as needed to achieve desired consistency. For extra creamy frosting beat on high speed for 4-6 minutes.

Fanciful Smores Cupcakes
Crust

7 graham cracker planks crushed
2 tablespoons butter softened
2 tablespoons sugar

Combine ingredients in a bowl. Place 1 teaspoon of mixture in the bottom of 24 lined cupcake tins.

Batter
1 package dark chocolate fudge cake mix
1 1/3 cups water less 1 teaspoon
½ cup vegetable oil
3 eggs
½ cup sour cream
1 teaspoon vanilla

Preheat oven to 350 degrees. Mix all ingredients in a bowl with an electric mixer.  Beat on medium speed for 2 minutes. Pour batter into cupcake pan prepapered with paper liners filling them 2/3 full and bake for 19-23 minutes. Let cupcakes cool completely.

Frosting
1 large jar jet puffed marshmallow cream
24 Hershey’s kisses

Just prior to serving, swipe a small amount of marshmallow cream on top of each cupcake. Place under the broiler until cream begins to brown, garnish with an unwrapped Hershey’s kiss and serve.
